I love pumpkin, and fall brings out the pumpkin lover in everyone. So i went searching pinterest for some yummy pumpkin recipes, and I came across a Crockpot Pumpkin Recipe. I figured why not give it a shot. So I got out all my ingredients and utensils, just to discover that there was no way my bread pan would fit into my crockpot, so I used the same ingredients, and decided to try and bake it. It turned out AWESOME. Best bread I've ever made, super moist, awesome flavor, it's just all around awesome pumpkin bread.
INGREDIENTS
- ½ cup of oil
- ½ cup of sugar
- ½ cup of packed brown sugar
- 2 eggs (beaten)
- 1 15oz can of pumpkin
- 1½ cup of flour (sifted)
- ¼ tsp. of salt
- ½ tsp. of cinnamon
- ½ tsp. of nutmeg
- 1 tsp. of baking soda
- (Optional) I added chocolate chips! Just do as much as you would like I just estimated about 1 cup.
- Preheat Oven to 325
- Blend the oil and both of the sugars into a large bowl.
- Then, stir in the beaten eggs and canned pumpkin. Add the remaining dry ingredients and mix thoroughly.
- Pour the batter into a greased or oiled bread pan. (I used Pam Baking Spray that worked just fine).
- Place in the oven and cook for approximately 1 hr and 15 min. I would make sure to keep an eye on it though :)
